The wrong team started serving at the start of the second set. We recognized it with the score 30-love. Should we have kept playing or started the set over with the correct team serving?

When an error in the serving order is discovered, correct it immediately, unless you’ve completed the game (or turn of service in a tiebreaker). Rule 27.c covers your situation perfectly: “If a player serves out of turn during a standard game, the player who was originally due to serve shall serve as soon as the error is discovered.” You should’ve kept playing with a new server starting at 30-love.
